Roast the Pineapple

Place the pineapple tidbits in a steam table pan and add the vanilla extract, mix to combine well. Place in a pre-heated 350°F oven and roast for 45 minutes, stirring every 15 minutes. Remove from oven, stir, and allow to cool completely.

Make the Dressing

In a large bowl whisk together the dry ingredients, buttermilk, and vinegar. Whisk to combine well. Add the yogurt and whisk to combine well. Add the mayonnaise and whisk to combine well.

Make the Roasted Pineapple Slaw

In a large bowl, put the cole slaw mix or shredded cabbage and roasted pineapple, including any juice, mix to combine well. Add the dressing and mix to combine well.

Heat the Simply Grilled Dippers

Convection Oven:
From frozen state, heat at 350°F for 5-7.

Conventional Oven:
From frozen state, heat at 375°F for 12-14 minutes.

Place 4 heated Chicken Dippers on bottom bun.

Top each with ½ Cup Roasted Pineapple Slaw and place top Bun on. Serve.
