Honey Mustard Chicken Sandwich with Roasted Pineapple Slaw

Honey Mustard Chicken Dippers 200
Pineapple Tidbits 1 - #10 Can
Whole Grain Buns 50
Vanilla Extract 1 Teaspoon
Dried Dill 1/4 Tablespoon
Garlic Powder 1/2 Teaspoon
Onion Powder 1/2 Teaspoon
Fine Ground Black Pepper 1/8 Teaspoon
Buttermilk 1 Cup
White Vinegar 1 oz.
Low Fat Plain Yogurt 1/2 Cup
Low Fat Mayonnaise 1/2 Cup
Cole Slaw Mix or Finely Shredded Cabbage 3 lbs.

Roasted Pineapple Slaw Ingredients
Pineapple Tidbits 1 - #10 Can
Vanilla Extract 1 Teaspoon
Dried Dill 1/4 Tablespoon
Garlic Powder 1/2 Teaspoon
Onion Powder 1/2 Teaspoon
Fine Ground Black Pepper 1/8 Teaspoon
Buttermilk 1 Cup
White Vinegar 1 oz.
Low Fat Plain Yogurt 1/2 Cup
Low Fat Mayonnaise 1/2 Cup
Cole Slaw Mix or Finely Shredded Cabbage 3 lbs.

Method

  1. Roast the Pineapple.
    1. Place the Pineapple Tidbits in a steam table pan and add the Vanilla Extract, mix to combine well.
    2. Place in a pre-heated 350°F oven and roast for 45 minutes, stirring every 15 minutes.
    3. Remove from oven, stir, and allow to cool completely.
  2. Make the Dressing.
    1. In a large bowl whisk together the Dry Ingredients, Buttermilk, and Vinegar. Whisk to combine well.
    2. Add the Yogurt and whisk to combine well.
    3. Add the Mayonnaise and whisk to combine well.
  3. Make the Roasted Pineapple Slaw.
    1. In a large bowl, put the Cole Slaw Mix or Shredded Cabbage and Roasted Pineapple, including any juice, mix to combine well.
    2. Add the Dressing and mix to combine well.
  4. Heat the Honey Mustard Dippers.
    1. Conventional Oven (Frozen Product): Preheat oven to 350°F. Heat for 14-16 minutes or until internal temperature reaches 165°F.
    2. Convection Oven (Frozen Product): Preheat oven to 350°F. Heat for 6-8 minutes or until internal temperature reaches 165°F.
  5. Place 4 heated Honey Mustard Chicken Dippers on bottom Bun.
  6. Top each with ½ Cup Roasted Pineapple Slaw and place top Bun on. Serve.
