red bell peppers, halved stem to end

Method

Heat vegetable oil in large saucepan set over medium-high heat; cook onion and garlic until softened. Place frozen steak on skillet. Cook for 1 minute and flip. Season with chili powder, paprika, salt and pepper. Cook for 1 minute and flip again. Using a spatula, gently separate steak into pieces. Cook for 30 seconds or until thoroughly browned.

Combine chopped meat, cooked quinoa, Parmesan cheese and 1 tbsp parsley; fill peppers. Place in shallow baking dish. Sprinkle with mozzarella cheese.

Cover with foil and bake in 350°F oven for 25 to 30 minutes; remove foil and bake for about 10 minutes or until cheese is melted and golden. Sprinkle with remaining parsley before serving.
