Beef and Quinoa Stuffed Peppers

Bell peppers stuffed with Steak-EZE® sliced steak, onion, garlic, quinoa, grated Parmesan cheese and chopped fresh parsley topped with cheese and baked.

Ingredients

vegetable oil 2 tbsp
onion, finely chopped 1
cloves garlic, minced 2
chili powder 2 tbsp
paprika 1 tbsp
salt and pepper 1/2 tsp each
cooked quinoa 2 cups
grated Parmesan cheese 1/2 cup
chopped fresh parsley, divided 2 tbsp
red bell peppers, halved stem to end 2
shredded mozzarella cheese 1/2 cup

Method

  1. Heat vegetable oil in large saucepan set over medium-high heat; cook onion and garlic until softened. Place frozen steak on skillet. Cook for 1 minute and flip. Season with chili powder, paprika, salt and pepper. Cook for 1 minute and flip again. Using a spatula, gently separate steak into pieces. Cook for 30 seconds or until thoroughly browned.
  2. Combine chopped meat, cooked quinoa, Parmesan cheese and 1 tbsp parsley; fill peppers. Place in shallow baking dish. Sprinkle with mozzarella cheese.
  3. Cover with foil and bake in 350°F oven for 25 to 30 minutes; remove foil and bake for about 10 minutes or until cheese is melted and golden. Sprinkle with remaining parsley before serving.
